Jelly Cakes with Berry Cream

Ingredients
250g butter, softened
2 cups packed soft brown sugar
1 egg yolk
1 teaspoon vanilla essence
2 cups plain flour
200g dark, milk or white chocolate (or some of each), broken into pieces
1 cup finely chopped nuts (optional)
Preparation method
1. Preheat oven 180°C/160°C fan forced. Line two 20x30cm slab pans with baking paper, letting it overhang on two sides to make handles.
2. Using an electric mixer, beat butter and sugar in a mixing bowl until light and creamy. Add egg yolk and vanilla and beat well to combine. Using a wooden spoon, stir in flour (mixture will be quite stiff). Using your hands, press dough evenly into prepared pans.
3. Bake for 20-25 minutes or until dough is cooked, firm and golden (layer will become crisp when cooled). Remove from oven. Scatter chocolate over layer, allow to melt, then spread evenly. Top with nuts. Cool completely, then break slabs into uneven pieces.
Store cookies airtight in a cool place. Omit nuts if you plan to serve these in a “nut-free zone”. Instead of cracking these cookies, you can cut them while they’re still slightly warm into uniform slices or squares.
