Tofu schnitzel with potato wedges

Ingredients
2 tablespoons soy sauce
1 clove garlic, crushed
1 teaspoon sesame oil
350g firm tofu, cut into 2.5cm dice
200g punnet grape or cherry tomatoes
150g button mushrooms
2 zucchini, thickly sliced
1 bunch large spring onions, trimmed and halved
1 tablespoon sesame seeds
Cooking oil spray
Salad greens, to serve
Preparation method
1. Combine soy sauce, garlic and oil in a bowl. Add tofu; marinate for 5 minutes. Drain, reserving marinade. Thread tofu and vegetables onto 12 wooden skewers. Baste with reserved marinade; sprinkle with sesame seeds.
2. Lightly spray skewers with olive oil. Cook under a preheated oven-grill, in a char-grill pan or on the barbecue for 5 minutes, turning often, until vegetables are tender. Serve immediately with salad.
TIPS:
Soak wooden or bamboo skewers in water at least 30 minutes before using.
