Ingredients
½ bunch coriander, chopped
¼ bunch continental parsley, chopped
2 garlic cloves, chopped
10 g ginger, chopped
¾ teaspoon sweet paprika
¾ teaspoon cumin powder, roasted
¾ teaspoon coriander powder, roasted
150 ml extra virgin olive oil
¾ lemon, juice
¾ large red chilli
1 teaspoon salt
Preparation method
To prepare the chermoula rub, mix all of the ingredients together until combined.
Rub the ocean trout with the chermoula and marinate for 30 minutes.
Pan-fry the ocean trout in a hot pan for 2-3 minutes each side. Serve with hummus, roasted eggplant, roasted capsicum and a lemon wedge.
