Tuna corn and onion quiche

Ingredients

  • 4 eggs
  • 1 cup low-fat milk
  • 1⁄2 cup buttermilk
  • 1⁄2 cup self-raising flour
  • 125g can sweetcorn kernels, drained
  • 4 green onions with tops, shredded
  • 425g can tuna chunks in brine, well drained, flaked
  • 3⁄4 cup low-fat grated tasty cheese
  • Baby rocket leaves and crusty bread, to serve

Preparation method

1. Preheat oven to 180°C/160°C fan forced. Lightly grease a 6.5-cup shallow quiche or baking or dish. Whisk together eggs, milk and buttermilk; season with black pepper.

2. Sift flour into a bowl; stir through corn, onion, tuna and most of the cheese. Add egg mixture; mix well to combine. Pour into prepared dish; sprinkle with the remaining cheese.

3. Bake for 35-40 minutes until set and golden. Cool slightly before cutting. Serve with rocket and bread.
Serve warm or cold. To reheat portions: loosely cover; microwave on HIGH (100%) in 15-second bursts until hot. Substitute a 450g can red or pink salmon for tuna if you like.
