Ingredients

  • 4 x 100/120g flattened veal steaks
  • 200g veal mince (forcemeat)
  • 1 tablespoon finely chopped and sweated green spring onions
  • 1 clove crushed garlic
  • 1 tablespoon finely crystalised ginger
  • 1 egg, salt and pepper to taste
  • ¼ cup dry breadcrumbs
  • 3-4 tablespoon of plain flour
  • 25g butter
  • 1 medium peeled and roughly chopped onion
  • 1 medium diced carrot
  • ½ cup diced celery
  • veal or light beef stock
  • dry white wine
  • 2 star anise

Preparation method

Combine the veal mince, spring onions, garlic, crystalised ginger, egg, salt and pepper; mix well and use breadcrumbs to take up extra moisture.

Fill the veal steaks with equal quantites of the seasoned veal mince; roll and secure with toothpicks.

Dust the rolls in plain flour; melt the butter, on medium heat, in a suitable sized ovenproof pan/baking tray (with lid) and add the onion, carrot and celery — cook for 2 minutes.

Pour in the stock and white white and the star anise, bring to the boil.

Add the floured veal rolls, cover the pan.

Cook until done in a preheated moderate oven (around 1 hour); remove from oven, test for seasoning.

Serve with mashed potatoes or a risoni pasta and green vegetables.
