Fragrant vegie pilaf

Ingredients

  • Olive oil spray
  • 1 clove garlic, crushed
  • 3 teaspoons mild chilli spice blend
  • 2 cups basmati rice
  • 11⁄3 cups vegetable stock
  • 2 cups frozen mixed peas, corn, carrots and beans
  • 4 green onions, sliced
  • 1⁄3 cup (40g) toasted slivered almonds, hazelnuts or pistachios
  • 2 tablespoons chopped parsley or coriander, to garnish

Preparation method

1. Preheat a saucepan over moderate heat; lightly spray with oil. Cook garlic and chilli, stirring, for 1 minute. Stir in rice, stock and 1 cup water; bring to the boil.

2. Reduce heat to very low. Add mixed vegetables. Cover; cook for 12-15 minutes until liquid is absorbed, rice is fluffy and vegetables tender. Stir through onion.

3. Stand, covered, until ready to serve. Fluff up rice using a fork. Sprinkle each serving with nuts and parsley.
Use as a side dish for char-grilled fish, pork scotch fillet or chicken breast. Look for Gourmet Garden chilli blend in the chilled produce section at supermarkets. To toast nuts: stir in a dry frying pan over moderate heat until golden; rub off skins if needed.
