Ingredients
1⁄2 cup thick yogurt
2-3 teaspoons tandoori paste, to taste
Squeeze lemon juice
225g container heat-and-serve falafel balls
2 Turkish bread rolls, split, toasted
1 cup finely shredded iceberg lettuce
1 large tomato, thinly sliced
Slivered red onion
1⁄2 cup grated tasty cheese
Mint leaves, to garnish
Preparation method
1. Place yogurt, tandoori paste and lemon juice to taste in a small bowl; mix to combine.
2. Place the falafel on a microwave-safe plate; loosely cover with plastic food wrap. Microwave on High (100%) for 40-60 seconds, until heated through. Cut balls in half.
3. Place base of bread rolls on serving plates. Top with lettuce, tomato, falafel, onion and cheese. Spoon yogurt mixture over. Top with mint. Serve with roll tops.
Look for packets of chilled falafel at supermarkets, green grocers and delis. Alternatively, you can make your own from a packet mix.
