Rhubarb and walnut crumble

Ingredients

  • 1kg rhubarb, leaves and stem ends discarded
  • 1⁄2 cup brown sugar
  • 1⁄3 cup sultanas
  • 11⁄2 cups plain flour
  • 100g cold butter, cut into small dice
  • 1⁄2 cup demerara or raw sugar
  • 3⁄4 cup chopped walnuts
  • Pouring custard or ice-cream, to serve

Preparation method

1. Preheat oven to 180°C/160°C fan forced. Butter an 8-cup ovenproof dish.

2. Cut rhubarb into 3cm lengths. Combine rhubarb, brown sugar and sultanas in prepared dish; spread evenly.

3. Place flour, butter and demerara in a food processor; process using Pulse until crumbly. Stir in walnuts. Sprinkle evenly over fruit.

4. Bake for 40 minutes until fruit is tender when pierced and topping golden brown. Serve warm with custard or ice-cream.
