Ingredients
5 tablespoons golden syrup
150g unsalted butter, softened
150g castor sugar
2 eggs, beaten
½ teaspoon vanilla extract
1¼ cups self-raising flour
½ teaspoon bicarbonate of soda
2 tablespoons milk
Preparation method
Grease a 4 cup pudding basin with butter. Pour the golden syrup into the base of the pudding basin.
Beat the butter and sugar together until fluffy. Beat in the eggs and vanilla extract. Sift the flour and bicarbonate of soda together and fold into the batter. Stir in a little milk so that the mixture is soft, dropping consistency. Pour into the prepared pudding bowl.
Cut a round of non-stick baking paper and place onto the top of the pudding. Cover the top of the basin with alfoil and secure with a rubberband. Stand the pudding basin in a pan of water to come halfway up the basin. Steam for at least 2 and a half-hours, topping the pan up with water during the cooking time as required.
Remove from the pan and cool a little. Remove the foil and baking paper and turnout onto a serving plate. Slice and serve with
double vanilla custard sauce
.
If using a pressure cooker follow the manufacturer instructions for cooking time and pressure.
