Ingredients
3 cups chopped/cubed Pumpkin
1 eggplant chopped/cubed
1 onion chopped
1 can Chickpeas
15 x chopped Dried Apricot
4-5 tablespoons Tika Massala paste
2-4 tablespoons Morroccon spice seasoning (in the herb section)
500gm Cous Cous
2 tablespoon Oil
500mL stock
Salt / pepper to taste
Preparation method
Stew
Put onion, pumpkin, apricots, eggpant, tika masala paste and moroccon spice into a large saucepan and stir for a couple of minutes. Add chick peas (with juice) and approx 3 cups water and stir until boiling. Reduce to simmer for 30 mins until all ingredients cooked and stew thickened.
Cous cous
Put 500gm cous cous into 500ml warm stock and let sit for 5mins. Begin to heat gently whilst stiring and adding oil. Now serve - yum! I am not a vegetarian; i made this with the intention of including lamb, however forgot to buy lamb and made it anyway and it was soo good, even my carnivore partner loved it - and so did my 5 year old boy!
