Ingredients

  • 1½ cups (225g) self-raising flour
  • 2/3 cup (150g) caster sugar
  • 125g butter, at room temperature
  • 3 eggs
  • ¼ cup (60ml) milk
  • 2 tablespoons currants
  • icing sugar, to dust

Preparation method

Preheat oven to 180°C or 160°C fan. Line 2 x 12-hole patty pans with paper cases.

Sift flour into a medium-sized bowl. Add sugar, butter, eggs and milk. Using an electric beater, beat mixture on medium speed for 3 minutes, until smooth and pale. Stir through currants.

Spoon heaped tablespoons of mixture into prepared paper cases. Bake for 15 minutes, until golden and firm to touch. Cool on a wire rack. Dust with icing sugar to serve.
