Ingredients
1 cup sushi rice
2 tablespoons sushi seasoning
2 teaspoons sugar
1 teaspoon salt
½ teaspoon wasabi paste (or to taste), plus extra to serve
4 large nori sheets, cut into squares
1 cucumber, seeded, cut into batons
1 avocado, peeled and cut into thin strips
16 small cooked prawns, peeled and halved
soy sauce, pickled ginger to serve
Preparation method
MAKES 16
Cook sushi rice following packet instructions. Drain well. Pour combined sushi seasoning, sugar and salt over, tossing lightly. Set aside to cool completely.
Spread a little wasabi paste onto each square of nori. Top with a rounded tablespoon of rice.
Arrange 1 piece cucumber, avocado and 2 prawn halves along centre of rice. Roll nori around filling to form a cone shape. Continue until all rolls are assembled – or arrange the food on a platter and get the guests to make their own! Serve straight away with soy sauce, extra wasabi and pickled ginger.
TOP TIP
Sushi rice and nori sheets are available from supermarkets.
Wasabi is a spicy green paste commonly used in Japanese cooking. It is available from supermarkets or delicatessens.
Cooked sushi rice is best served as soon as possible after cooking, and at room temperature for best flavour.
