- 4 crisp rolls, such as pane di casa, halved horizontally
- 6 x ½cm slices smoked mozzarella
- 1 cup shredded radicchio
- 1 heaped tbsp golden raisins, coarsely chopped
- 1 tbsp balsamic vinegar
1 Preheat a sandwich maker.
2 Lay out bottom halves of rolls. Cover each completely with a layer of smoked mozzarella. Top each with ¼ cup radicchio and 1 heaped tsp raisins. Season to taste.
3 Replace tops of rolls and grill until bread is golden and cheese has started to melt, about 3mins. Transfer to a board, remove tops and drizzle each with 1 tsp balsamic vinegar. Replace tops, cut in half and serve.
