Beef red curry with coriander rice

Ingredients
2 cups cooked SunRice Basmati Rice
480g diced beef
4 tablespoons vegetable oil
3 teaspoons each of crushed ginger, crushed garlic and ground coriander
2 cinnamon sticks
2 onions, diced
1 cup chicken stock or water
3 tablespoons raisins
1/2 bunch fresh coriander, roughly chopped
salt and pepper to taste
Preparation method
1. Heat oil in a saucepan, add diced beef and fry until lightly browned. Add onions, ginger, garlic, coriander, cinnamon, and sauté for 2-3 minutes.
2. Add stock or water and simmer until beef is tender.
3. Add raisins, stir in SunRice Basmati rice and season with salt and pepper.
4. Serve and sprinkle with coriander.
Tips
To save time, you can use an already prepared spice mix.
